We've been vegetarians since June of 2013. We were never really big meat eaters....I have a bunch of weird food allergies that limited me to basically white meat chicken and turkey, so eating meat was a once or twice a week kind of thing for us. One night after putting Stinky Face to bed, Pancake and I decided to watch Food Inc. Soon after that we watched Forks over Knives, and then Vegucated. And just like that, we were vegetarians. All it took were some food allergies and 3 documentaries. At first it was hard. We often felt like we were eating a bunch of side dishes. Over the months that followed though, we learned how to turn "side dishes" into full meals. And after a while, not eating meat just became our new normal.
People often ask me if I miss meat. Not really. The only thing I sometimes miss is a really good chicken noodle soup on a really cold day. Other than that, I'm content (and I make a pretty fantastic vegetable soup, so I don't even really miss the chicken noodle soup all that much). Moving forward, I'll use "The Veg Life" and "Recipes" categories to share some of our favorite snacks and meals. If you have any vegetarian or vegan recipes that you love, please pass them along.
